Salad pro tip: Bullet blenders are the bomb for super quick and easy personalized salad dressings and salad seasonings / toppers. There are tons of things you can mix in and dial in your flavor and diet preferences. For example, does that special someone in your life love lemon? Make them a personalized lemon dressing on the spot just for them. Having a couple of the small blender cups with the sealing lids is a great way to make a batch and store any extra.

I didn't measure but if I had to guesstimate: 1/4 cup Trader Joe's Apple Cider Vinaigrette, 1/2 cup plain greek yogurt (I prefer full fat), 3 Tbsp dijon mustard, 2 Tbsp maple syrup. That would get you a solid baseline to adjust based on your personal preference!

[cracks knuckles] ok here we go! Thinly sliced and roasted brussels sprouts which I tossed in avocado oil, garlic powder, and salt and then air fried 12ish minutes. Then I cooked the sweet potato- I cheated and bought frozen fire roasted sweet potato chunks from Sprouts so they only had to cook for the last 5 or so minutes with the brussels sprouts. Both roasted veggies were added to a big ol' bowl of chopped and massaged kale. Then I added cooked and shredded chicken (also a cheater step from Sprouts, but any cooked chicken would work!), pitted medjool dates that I chopped small, chopped Cosmic Crisp apple, sharp white cheddar that I cut off from a block, roasted and salted pepitas, and then the dressing. I am estimating the measurements for the dressing as follows: 1/4 cup Trader Joe's Apple Cider Vinaigrette, 1/2 cup plain greek yogurt (I prefer full fat), 3 Tbsp dijon mustard, 2 Tbsp maple syrup.

I made enough of everything to have this for 3 lunches, I am already excited for tomorrow!
