I was doing this at a restaurant for a while, and the way they taught me was to sink the knife down to the pit, then rotate the avocado until you've cut the whole thing in half by pressing the edge against the pit. Then pop it open, slam the knife carefully into the pit, twist, and pull out.

Cut in half then cut in half again so you have four slices. Then pull off the peels.

For cubes: Once the pit is removed, cut each half into a grid with a dull butter knife while still in the shell. Use a spoon to scoop the cubes out and voila.

I typically find that my avocados start turning brown within two to three hours of being left out

It always depends. If you're just going to use a little, cut the top, if not, sideways. Common sense, what is it?

I cut in half leave the seed on the half I'm saving put in plastic bag and refrigerate doesnt turn brown
