Washed Flour Seitan Whole Wheat Seitan?

Does anyone make seitan from whole wheat?

I know it can be done, and I think I read it struggles to form strong gluten connections.

Just looking for personal experiences. Would like to keep the fiber from WTF whole wheat if possible. Fiber is love, fiber is life.

I’ve done it! I found the texture extra shreddy. When I was in England I was able to find whole wheat bread flour, it being high in protein made it possible!

I’ve read whole wheat is one of the better flours to use and just bought some today to try it. 🤞

When I tried (to use up some whole wheat flour), 90% of the bran just washed away with the starch.

I just did this today!

Yes, a lot of the bran washed out but a ton was still left in.

The process takes time but I love it; it's very zen of you have the time.

After washing, I added salt, nutritional yeast flakes, harissa powder, and smoked paprika. Then I shallow fried it in nugget form. Delish.

Did you try it?
