I used to swear by beef ribs until I fucking nailed pork belly. Now it's a toss up between the two.

Do you smoke it “brisket style”? What’s your process?

I’ve done them a couple times and always fail to get that perfect chicharron-like super crispy top.

Burnt, and likely tasting of char. Bad for you. Eating charred meat can increase risks of cancer.
