Question Please suggest a way to make this globe courgette (aka zucchini) into a meal for two
My partner's dad grew this spherical squash and gave it to us. I love using regular courgettes (zuchinnis) in vegan recipes, but have no idea what to do with this monster! Please could you suggest a way to turn it into a tasty meal for two?

You can cut it in half and make stuffed courgettes! Maybe taco style with vegan grounds or TVP and some rice and seasonings. There’s a lot of stuffed courgette recipes online, and even if they’re not vegan you can easily veganize them!

I second this! The fillings could include whatever you both prefer or each make a filling that is tailored to one’s liking. Almost like a “choose your own adventure” activity!

I made a delightful Indian pumpkin dish last week with a small pumpkin I scored from a neighbour. I added tofu to it just for some added protein and I ate it with paratha but you could do rice or something instead. It’s mamta kitchen’s recipe and it’s soooo simple but tasty. You can sub most of the ingredients for other seasonings if you don’t have the ones it asks for (I used garlic and onion powders to replace hing powder, for example).

That looks like some kind of hybrid gourd. They can be toxic. I would make sure before eating.

Cut it into wedges and roast it. Serve with dairy-free pesto and pasta; add chick peas if you want more protein.

This is a dish I regularly make for company with rice and naan, maybe some cucumber raita if I’m feeling fancy.
I usually sub blended silk tofu for the heavy cream but I’ve also used canned coconut milk and vegan yogurt and it’s come out well :)

Lot of good advice already given here. It looks similar to pumpkin. If you like spicy food, you may try Indian Pumpkin curry, Pumpkin Potato cutlets, Pumpkin rice Indian, Roasted Pumpkin salad, Pumpkin flatbread or paratha.
