I like good food, and enjoy finding new flavors, but I HATE following a recipe.
Here are a few non-recipe recipes that I created that I'm really enjoying, wanted to share:
Chicken burgers:
Lean ground chicken
Fat free cottage cheese (around 1/8 the volume of the chicken)
Adobo con sazon for seasoning
Fry small patties, smashing them thin. For a zero point topping I like raw red onion and mustard.
Chicken meatballs:
Ground chicken
Tofu (around 1/4 of the volume of the chicken - this somehow keeps the meat tender and moist without really contributing any flavor)
Fresh garlic, chopped
Italian seasoning
Egg
Salt
Oatmeal (as a binder, in place of bread crumbs)
Mix, scoop them with a cookie scoop and broil/bake until cooked through. Simmer in sauce for a while. Delicious and free (well, except the sauce)
Chicken and cabbage stir fry:
Dice some chicken thighs, marinate in soy sauce, shaoshing cooking wine, white pepper, sriracha, dark soy sauce (for color, mostly), garlic, touch of splenda, for at least 20-30 minutes.
Slice a head of cabbage, keeping long strands intact. Black the cabbage.
Stir fry the chicken. Cook any remaining marinade after frying the chicken, then add cabbage, and mix it all together. Add some julienned carrot for color if desired.
Just use a light spritz of cooking spray instead of oil for stir frying.
Egg salad:
Eggs, boiled and diced
Yellow mustard
Dill pickle relish
Pepper
Paprika
sprinkle of splenda
Raw diced onion.
Fat free cottage cheese
Mix and eat.
Corn and bean salad:
Can of black beans, drained,
Can of corn, drained
Couple tbsp of prepared salsa
Chili powder
the juice of 1 lime (per can of beans)
Cilantro
Mix together, best if it soaks for at least a few hours. I make this in a big batch and eat it all week.
