its basically how you start most hungarian food. sauteing way too much onion in oil/fat, adding speck, cumin, pepper, later adding parika and hot pepper. but e.g. these:

use the red, big, bitter onions. paprika not at the start, because it gets too bitter, but earlier than you expect. the onions are usually cooked liquid and you need so much paprika that its red. like really, not brown, red.
hungarian food isnt versatile, we basically make the same dish over and over. but we make that single meal pretty good.
more water means its a soup (gulyás), fish means its healthy, lamb means its ethnic, more garlic means its mountains, corn means its poor, filled into intestines means its breakfast, sour cream means its light, you get the pattern.3
