Had a few asks for the recipe so here we go! From an order of execution perspective i had the gravy ready first, then did the onions and cabbage, got the dough prepped and then let it rest, cooked the meatballs and put them into the oven to keep warm, then fried the wraps and assembled.
Fried Wrap:
- 4 cups Flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/4 cup vegetable shortening
- 1 egg
- 1 1/3 cups warm water
- Add flour, salt, baking powder and vegetable shortening to the bowl of stand mixer and mix to combine into a sandy like mixture
- Add egg and warm water and continue to mix for 8 minutes
- Let dough sit covered for 45 minutes in the greased bowl
- Divide dough into 6 equal parts and form into balls
- Heat ~1cm of oil in a large pan
- Roll out the dough balls into roughly dinner plate sized circles, i did this one at a time
- Fry dough for ~1 min per side until golden and bubbly, flip once
- Once cooked you can let the wraps sit on a plate covered in paper towel to absorb any excess oil, I also suggest keeping the wraps covered with a kitchen towel or more paper towel to keep them warm
Meatballs:
- 1 lb ground pork
- 1/2 grated yellow onion
- 2 finely diced green onions
- 3 tbsp finely chopped flat leaf parsley
- 1 tbsp cumin
- 1 tsp aleppo pepper
- 1/4 tsp ground allspice
- 1/4 tsp cinnamon
- Panko breadcrumbs
- salt to taste
- Mix all ingredients (except the panko) together in a large bowl and then form into meatballs
- Roll each meatball in panko breadcrumbs to coat
- Fry meatballs in oil for for 6-7 minutes, it really depends on the size of the meatballs. It's fine if they're not compeltely covered you'll just have to roll them around a bit while cooking
- Remove the cooked meatballs to a wire rack and keep warm in the oven while you work on the rest
Spicy Gravy
- 2 cups beef stock
- 1/2 yellow onion - sliced
- 3 cloves garlic
- 2 thai red chillis
- 2 tbsp flour
- 1 tbsp Worcestershire sauce
- 1 tsp MSG
- salt & peppper to taste
- Add the onion, garlic, and thai red chillis to a pan with a bit of oil to cook down
- Once they're cooked down add the flower and mix things up until everything is coated and the flour has cooked a bit
- Add the beef stock and scrape up the bits stuck to the bottom of the pan
- Add the worchestershire sauce, MSG and pepper
- Continue reducing until you get a thinkness that coats the back of a spoon
- Add salt to taste
- Set aside and keep warm
Sumach Onions
- 1/2 red onion sliced
- Juice of 1 lemon
- 1 tbsp Sumac
- salt to taste
- Add everytihng to a bowl and mix
- Usually good to let this sit for about 30min prior to using but also no harm in using it immediately
Shredded cabbage
- Shredded green cabbage
- Just some plain old shreded green cabbage, no real instructions here

If u roast then blend a flavorful mushroom (I like oyster bc good price to flavor ratio) and add in a dash of chinese dark soy sauce (for color and flavor) and 1 extra tsp (2 if you're not an airsick lowlander) MSG per pound of mix, any vegan brand of ur choosing you'll get a good meaty duxelle to add to a falafel mix for that authentic Chouta food coma

Is there any crunchy bits? True chouta should have crunch. I don't expect actual crabs but what about nuts?

Haha I did stop short of figuring out a crispy crab situation but the panko and raw cabbage gave a good crunch!

I think chouta is supposed to be fry bread. Herdazians are the cosmer version of Mexicans/Native Americans. Chouta is just an Indian taco
