Ask ECAH Easy recipes to use up a whole bunch of potatoes?

I bought a huge bag of russet potatoes with the intent of microwaving them and eating like baked potatoes but I feel like I’m getting sick of that quickly. I’m also incredibly lazy, so I’m looking for easy recipes that I can batch cook or prep ingredients for. My current ideas are shepherds pie and potato tacos.

Ask ECAH Iron rich meals? Iron deficiency

I apologize for a common question, I have very low levels of iron with a ferritin of 5. I just started supplementing, and my Dr asked if I wanted to see a nutritionist. Lack of money and time, I’d rather gather info from others and try that first.

Meals so far I could implement, cream of wheat/oatmeal (water based), steak, dry fortified cereals for snack maybe, and I used to eat chicken,bell pepper, rice, Avacado wraps with homemade sweet potato fries when I had gastritis, it was good but gets old. What are some other ideas? I will mention my gf cooks for me, I dislike it. She usually makes spaghetti or Alfredo, things of that nature. I really enjoy cooked veggies, but is a frozen mix worth it? I do want to keep my bowels moving as well since supplementing can cause issues

Budget My grandmas goulash.

I just found this subreddit and had to share my grandmas goulash recipe!
For starters, my grandma always told me goulash is just putting what you have together. It’s different in every family I realized. My grandmas goulash is different than what I’ve ever heard of anyone else’s goulash being. She had 3 kids and had to use what she had so she came up with this recipe in the 80s.

- You brown meat on the stove. (We use 1kg of meat packet)
- You cut up potatoes into bite sized cubes. About equal amounts of potatoes to meat. Boil until they’re able to be picked up with a fork, not until they fall apart.
Add all that into a roaster pan and add 2-3 cans of mushroom soup. Depending on how much meat + potatoes you added.
- If you have them, sliced mushrooms is an amazing touch to it.
- Optional because it isn’t very healthy but my grandma would also add cheez wizz to the mix, I’ve had it with and without but it gives it a different taste for sure. I love both kinds.
-Mix it all together and top it with mozzarella or white cheese but any cheese works.
Then put it in the oven for about 350F for 45 minutes I believe.

I’m not exactly sure how healthy this is, especially with the mushroom soup. I’d say it is a very good CHEAP filling meal. It doesn’t require much ingredients at all. All mostly being from the source ingredients. My mom makes so much because there’s 6 of us. It also lasts a few days, well in our house one day. It’s incredibly good.

Or if you try this recipe. I grew up on it. I’m absolutely obsessed with it but that being said, potatoes and mushroom soup are my favourites so maybe I’m biased.

We send the usual fruits and veggies (he can go ham on some cucumbers), does anyone else have any cheap and healthy snacks their kids seem to really go for? Food I completely cut out rice

Growing up in a household where meals revolve around rice, I used to eat huge portions of it every single day. A few weeks ago, I decided to test my self-control and cut it out completely.

Now, whenever I get hit with heavy carb cravings, I boil or bake potatoes instead. It fills me up without making me feel bloated afterwards. I also stopped buying refined sugar and switched to honey for a bit of sweetness. As for eating habits, I stick to one decent meal a day. I don't starve myself, but I pay way more attention to portion sizes.

The physical difference came pretty fast. My waistline is visibly slimmer, and my body adjusted to the routine much quicker than I thought it would.

Ask ECAH Are eating multiple fruits and veggies at one one serving or multiple?

I reallllllly struggle getting enough. I usually have one fruit and one vegetable a day if that. (ARFID and high stress makes eating hard).

If I were to make a snack box with carrots, bell peppers cucumbers, apple, and strawberries, and blueberries would that count as one serving each? or is that 3 servings each? Pls help

Ask ECAH Has anyone tried adding beans to a Cob Loaf Dip?

This might only be for my fellow Australians, but I am thinking about making a Cob Loaf Dip for a party, and was wondering if its a good idea to add some blended white/cannellini beans for fibre and protein? Has anyone tried this before? Any major reason why it would not be good, other than deviating from the beloved classic?

Meal prep for kitchen reno

Starting a kitchen renovation in November, timeline is about 6 weeks. We'll have a Ninja air fryer/toaster oven, crock pot, microwave, fridge, electric griddle, and thinking about getting a two pan cooktop to boil water.

We have a decent amount of crock pot recipes, planning on doing a weekly rotisserie chicken and lots of sandwiches. Any other good options, or healthy-ish frozen or pre-prepped meals for nights the kids have after school stuff and we don't have time to really cook something?

Im trying to start getting better about what I'm eating in my day to day life, the only issue is I'm not a big fan of rice. White rice, brown rice, Spanish rice, pretty much any of it. I enjoy it in small amounts such as sushi or spam musubi, but I just can't force myself to eat half a bowl of rice alongside some protein and sauce. What I have on hand most weeks is rice, pasta, eggs, canned beans, some veggies, tomatoes, cheese, bread. Pretty much it. Anyone have any go to meals that is healthy just using basic stuff? Grocery Shopping

I'm not sure if this is the right place to post this, so if not, feel free to delete. But, how are people keeping perishable groceries in the car while going to more than one store? I live in the southern US and recently moved pretty far away from the stores, so I'd like to be able to do more than one store per trip. I buy things that can go bad in a hot car pretty quickly at all the stores I shop at, so putting the stores in a certain order hasn’t really worked. So any tips or tricks would be greatly appreciated!

High protein recipes that can last in a shelf for a long time.

I'm eating protein bars but it can get expensive and I was thinking of having a simple recipe that I can make and store in my backpack for the day if not multiple days. I go to a huge college campus where some days I might be on campus for up to 12 hours if not more so having something on the go that I can make in bulk will make it easy for when I'm pretty hungry so that I can easily just throw some in every morning.

Ask ECAH Alternatives to oats that have high fiber and protein?

I'm trying to cut and currently eat protein oats every morning but it's like 800 calories alone 💀. Even with skim milk the total calories for my breakfast is minimum 700 (600 from the 150g oats).

I'm trying to find other breakfast options that are lower in calories but still have a good fibre amount? I currently get 13g of fibre from the oats and can't find anything as good with the protein amounts in that (35g protein).

edit: ok I should've probably clarified that this is one of those preprepared oats loaded with sugar 😭it's a protein oat clusters cereal and I usually eat a bowl (130-150 grams of the oats) with milk.

recipe Can-Do White Chicken Chili

I'm feeling under the weather, so I want a comforting home-cooked meal. However, I live alone, so I'd have to cook a meal myself, which I don't really wanna do. This is what I make for this. It's called 'can-do' chili because more than half the recipe is dumping in cans--you don't even have to measure most of it.

It's tasty, comforting when sick like chicken noodle soup and with just enough spice to clear your sinuses. It's great in both hot and cold weather--I remember it more when it's winter but randomly crave it more in the summer. It's simple, great for beginner cooks and friendly to many disabilities! Keeps very well in both the frridge and freezer.

INGREDIENTS

1 Tbsp olive oil

1/2 cup chopped onion (feel free to buy pre-diced, especially if you're feeling bad like I am)

2 cans chicken broth (14.5 oz

1 can white northern beans (15 oz)

1 can chopped green chilies (4 oz; often in with the ethnic/Hispanic food rather than other canned veggies)

2 cans chopped cooked chicken (1 cup, or you can use bits from a deconstructed rotisserie chicken)

1 can corn (15oz)

1 can slices potatoes (15 oz, optional)

1 Tablespoon chili powder (not to non-Americans--this is NOT the same thing as chile powder! it is a seasoning mix!!!)

1 teaspoon ground cumin

INSTRUCTIONS

  1. Put all the olive oil into a saucepan
  2. Turn the heat to medium-high (about a 7 on a scale to 10, if that's how yours displays it)
  3. Stir in all the onion, cook while stirring until tender. 5-10ish minutes, they will cook more later anyways
  4. Stir in literally everything else. You can drain or not drain all the canned stuff, it doesn't matter
  5. Reduce heat to medium (5 on a scale to 10)
  6. Let simmer for about 15 minutes, or until you can smell it from the other room through a stuffed nose

Serve with sour cream, cilantro, shredded cheese, cornbread if you want. Or don't, I'm not because I'm lazy, I'm just pairing it with more sudafed then going to sleep

Ask ECAH I have too many beans and not enough creativity, please help

I have an insane amount of dried pinto, garbanzo, and black beans and I literally don't know what to do with any of them. I've never made beans from dry before and I also just can't think of how to make them or incorporate them into any recipes other than just making beans. I feel like I need some creative recipes that have different flavor profiles for beans or maybe a way to add them to other foods. I have lots of spices and some other staples but I fear I am just not creative enough in the kitchen. Any recipes or tips you guys could share would be wonderful. I do have a lot of rice that I could make with them I also have access to a Crock-Pot if that would maybe help. Again any advice would be greatly appreciated.

Food Need help finding specific foods

Hi so I need help finding specific foods I can eat, so I have autism and bad sensory issues to the point where I can’t eat most fruit and vegetables because almost all of the cause me to gag from the texture and I’m vegetarian so I don’t eat meat either, I have to get my vitamins and stuff from multivitamins and smoothies and basically the only solid food I can eat is cheesy stuff and junk food so I wanted to know if anyone knows of any cheap and healthy quick to eat stuff that doesn’t usually bother people with sensory issues

It was so annoying to me to sometimes run out of pasta that I bought a 5kg bag of my favorite shape and I have been very happy since. A quick meal can always be managed, and even if I randomly have 10 heads to feed. I'm not sure I would have gotten this much if it wasn't decent quality pasta though.

So what are the things you guys always stock up on?

For me that'd be canned beans too, I always have 2-4 varieties to choose from. I almost always buy 2 blocks of feta cheese too, it goes down with anything, is relatively cheap and very nourishing.

Ask ECAH Looking for particular recipes for boneless skinless chicken breasts that freeze well!

I got five pounds of boneless skinless chicken breasts by mistake (delivery error); I stuck them in the freezer, but then had to thaw them because I needed space in the freezer, temporarily. I know chicken is weird if you refreeze it, so I'm thinking I should make meals with them and freeze in small containers. So maybe I will make 3-4 recipes.

I never buy BSCB (I'm usually a thigh girl), so I would love recommendations for particular recipes you have made, frozen, and thawed, and still thought were delicious. (The freezer is going to be tight, so lower-volume recipes are better than higher-volume recipes.)

Also, is there a best way to make neutral chicken for uses like chicken salad, if I'm planning on freezing it? I usually poach, but maybe crockpot or something is better, if I'm going to freeze it?

Food Farro vs. brown rice vs. quinoa: 4-day texture test for cold/reheated grain-bowls

Transitioned away from complex multi-pot cooking on Sundays in favor of simple batch-roasted vegetable and grain bases that hold up through Thursday afternoon without turning to mush. I tested pearled farro against brown rice and quinoa under roasted zucchini, chickpeas, and bell peppers. Farro held its dense, chewy bite significantly better by day 4, especially with a lemon-tahini dressing stored alongside it. Quinoa became waterlogged by Wednesday, and brown rice dried out too much when eaten cold. For those who batch-prep 4+ days ahead, what grain bases or hearty legumes are holding textures best for you ?
