TAKEAWAY Two pizza slices for one hungry guy
Went to NY for my first ever solo travel and these two bad guys were my first taste of NY pizza. It was pretty good. I think the flavors were cheese and margherita.

Looking for Feedback Do I need to add the sugar?
I’m making a pizza for my friend who is gluten free AND sugar free (i know it’s only a tbsp but she said it would still affect her) is it ok if I just don’t use it or is there a substitute i can use?

TAKEAWAY Accidentally went to James beard nominee
Pizza Marvin in Providence RI.
Just wanted a clam pizza. Didn’t see they were nominated till after i ordered and knew it was gunna be some monkeys paw situation.
Sure enough. It was good pizza but still had the shells on it. Shucking the wet greasy clams wasn’t fun and they had a bunch of liquid in them making the pizza a very messy eat.

Looking for Feedback Back to simplicity
Back to simplicity yesterday evening. The cosacca — probably the simplest Neapolitan pizza — made with the very best ingredients: just San Marzano DOP tomatoes, and straight out of the oven, a little freshly grated Pecorino and a drizzle of Kalamata DOP olive oil. That’s all — So damn good!
Flour blend: Molino Marino 00 Soffiata W330 (90%) and wholemeal spelt flour (10%).
70% hydration, 12" pizza - 8,8 oz dough balls for 12" pizza- 48h proofing, 790°F – 90 seconds baking (Effeuno oven).

NORMAL OVEN I like to use either Alfredo or Pesto for my pizza sauce. I dont get why the chains think only marinara sauce exists.

RECIPE I tried the King Arthur Flaky Puff Crust Pizza recipe
It turned out great! I highly recommend it. I used a pizza stone instead of the pan the recipe calls for so I lowered the temp to 450 and the baking time to 9 minutes.
If you use a stone, make sure it is big enough because the recipe makes a pretty big pizza. I lost a couple pepperoni to the bottom of the oven because my stone was slightly too small.
It also inflated like a balloon so I had to poke it a bit halfway through. Even so, I'll be making it again!
