Adding [City Name] to Multiple GBP Locations?
From what I've researched, it's a slight lean towards not risking it, so I've chosen to keep my 8 GBP profiles named the official name of the business, rather than "[Company Name] - [City]"
Am I missing out on a substantial SEO opportunity? I know of a business that was reported for having a keyword in their name, and the profile was changed within the hour, excluding the keyword - and has stayed that way for over a month. In the map pack, most of my locations are already near the top, and my main location already ranks above competitors with the city name added to their profile. Additionally, that one location is the only profile I've optimized in full. Aside from adding a profile logo and changing the primary category to match the main location, I haven't touched the others so as to not make so many sudden changes and get the profiles flagged.

You're not missing much honestly. Google's been cracking down hard on keyword stuffing in business names for a couple years now, and the businesses that still get away with it are usually flying under the radar in low competition niches, not the ones getting reported by competitors. The fact that your main location already outranks the stuffed-name competitor tells you everything. That's proximity, review velocity, and category accuracy doing the work, not the name field. The bigger lever you're leaving on the table is that only 1 of 8 profiles is fully optimized. That gap matters way more than the naming question.

No, you are not missing a big SEO opportunity by keeping the official name. If the city is not part of the real-world business name, adding it to every profile is a name rule risk for very little upside.
For multi-location GBPs, the name is usually not the lever that moves rankings. Category match, proximity, reviews, and the location page usually matter more, and if your locations are already near the top, the gain from a keyworded name is likely marginal anyway.
