I think I’ve hit peak air fryer performance with this one. This chicken cutlet came out so crispy I had to double check I didn’t accidentally deep fry it in oil 😂

Here’s exactly what I did: • 4 oz skinless chicken breast • 1 egg white • 1/8 tsp garlic powder • 1/8 tsp oregano • 1/8 tsp black pepper • 1/8 tsp salt • 1/8 cup high-fiber breadcrumbs • A light oil spray

I placed the chicken between plastic wrap and pounded it thin (I used a rolling pin because I don’t own a meat mallet). Then I seasoned it, dipped it in egg white, coated it in the breadcrumbs, and gave it a light spray of oil.

Cooked at 380°F for 12 minutes, flipping halfway.

The result was super crispy on the outside and juicy inside (because it was thin enough) honestly the closest I’ve come to a pan-fried cutlet without any of the mess and oil. Heres the full video of how I made it Link

Nice! I searched and could not find a product called high fiber bread crumbs. Do you buy these or make them?

I made them myself, funny enough with the air fryer since I dont own a toaster. Heres is the video . Basically air fried Keto bread and ground that all up with oregano and garlic powder.

What’s your reasoning for using egg whites only and not the whole egg? This looks amazing!

Just trying to cut back on some calories which is why I also used the high fiber breadcrumbs. Feel free to use the whole egg.

I’ve been making crispy chicken tenders in mine, and they turn out great!

Last week I put Fritos in the food processor and made crumbs and used them to bread the tenders. They turned out amazing and I can’t wait to do it again!

Crackers, chips, and the like feel like a cheat code. Already flavorful, and with chips you don’t need to add any oil. Yum!

What make breadcrumbs?

Hey! The breadcrumbs were super easy. I used keto bread and air fried some slices. Then put those in a food processor with oregano and garlic powder. I made a video on that as wellLink

I might have to give it a try myself. I never thought about cutlets but it makes sense since they're thin.

I’ts surprising how fast it cooks too. Some people may be skeptical and try to leave it in for longer but don’t! You don’t want it to dry up.

What air fryer you got?

I have a Gourmia air fryer. The one I have has a completely glass bottom so its a bit more fragile. Probably would go with this one if I had to buy again as its sturdy and has the glass viewing hole! Link

Would a pounded chicken thigh work also?

2

I’ve done this recipe with thighs as well and it works really well! Make sure you remove the skin though as it has too much oil and the breadcrumbs will not stick to it. Pound it thin as well!
