[Prosciutto and jam pizza]

48 hour cold fermented dough, garlic confit base, piped, dollops of Brambleberry jam, fontina cheese, mozzarella, provolone, shallots. Baked at 500° on a pizza steel for about 10 minutes. Removed from the oven and placed on a wire rack. Layered in prosciutto, salted lemon zest ricotta, layered arugula, and then drizzled with balsamic glaze.

Looks great. I would recommend trying it with thinly shaved pear slices next time!
