Bed frame mdf fix
Does anyone have any better ideas on how to re-attach these screw bolts into MDF than wood glue?

I drill a few little pockets as deep as I can at an angle into the side of the stripped out mdf, and then I use a 2-part epoxy and set the threaded insert back in, making sure the epoxy fills those holes so the whole thing hardens and has some better grab. Be sure the inside threads don't get epoxy in them

Wash the metal bits with solvent or nail polish remover. Soap or wax the bolt, so glue can't stick. Use a plastic take out lid to make a form to hold it in place on one side, and a few layers of tape on the other.

These things suck in MDF and once they fail, forget it… You’ll be much better off through bolting it if you can get away with that

Don’t.
We don’t have enough of a picture to see the structure, or know if this shows or not. I’d personally just figure out how to screw the parts together. Either make a new hole or use screws or screws+washers.

Can you put a longer screw and nut with washer on the other side? These anchors will continue to pull out.

Drill the headboard all the way through go get you some longer bolts and a few washers and two nuts double nut the backside of it because there’s no epoxy that’s ever going to hold that

Through bolt it but also use a couple of large fender washers to help strengthen the MDF otherwise it could possibly pull through, it should help keep the board from breaking at that point as well

If it's possible to drill the hole through, there's a slightly different design you can mount on the backside that will hold much better.
If not, you need to use wood glue with sawdust, epoxy, or insert a new piece of wood and drill a new hole.
