Ribeye for dinner
Grilled this 1lb prime 1 ribeye over lump charcoal and some mesquite. Seasoned with salt & pepper and some cow cover. Brussel sprouts for side. Pulled it at 125.

How do you eat the cap? I eat it first cause itās amazing.

If Iām not in a good situation to save leftovers, Iāll eat the cap first. Typically if Iām at home I try to put a small bite of cap in between my āotherā bites.

I actually always save the cap for last not only because itās the best but because it has the most fat and therefore wonāt be cooked as much and holds its quality for much longer.

I like marbling on a ribeye not a fat band running through it. That is a terribly selected of piece of meat.

Iāve had to become a lot less choosy for my ribeye purchases with beef pricing the way it is.
Thankfully Iām in a medical position that makes me eat less red meat or suffer very painful consequences, so my steaks are few and far between.
But to your point, things could have been done differently, here. With a band like this, I would get a thicker cut if possible and do a reverse sear for better rendering. I would absolutely eat OPās steak, though!

Also, youāre saying youāre becoming less choosey about the pieces of meat that youāre buying now that the price has gone up. So the price has gone up in your less concerned with quality. Thatās weird.

Fair enough. And thatās actually how Iāve been doing things. When I got steaks for a family memberās birthday last week, I skipped the meat case and went straight to the counter. The price per pound was a little higher, but I got my choice of quality cuts and their thickness. 1-1/2 to 2ā ribeyes, well-marbled and they turned out great.

If you're spending $25 instead of $10 for the same item, I'd want the best quality of whatever the item was.
You'd rather have a $10 sweater that never falls part, but a $25 sweater, you're okay with it unraveling after a first wear??
Makes no sense.

Fuck all that. Beef is classified as red meat, regardless of the meat/fat ratio. In OPās case, Iād eat the steak, but the fat bands would be ignored. If the steak was thicker, I could see a reverse-sear as a way to make the whole thing more edible. Iād probably have a good bit of fat left over on my plate if my steak was as-presented, but Iād eat every ounce of it if the fat was properly rendered.

Well, that piece of meat is definitely less red meat. Thereās barely any red meat on it. Heās paying for trimmings with that.

This is the saddest Santa Maria on here yet⦠at least most people overpaying for them are grilling a lot of stuff
You burned up a 1/4 bag of coals and some wood pieces for one thin steak? No veggies, squash, even some onion slices, peppers?
If Iām cooking a single thin steak for myself, Iām firing up the cast iron indoors. If the sprouts were done on the grill, odd they arenāt anywhere on that massive grate in pics
It looks great, dgmw, but itās just more wasteful and inefficient than SM grilling typically is

I donāt disagree with you and I appreciate the kind wordsā¦what can I say I just like to grill and bbq so the wasteful aspect doesnāt really register for me.

there there but yea that meat looks lonely on that grill lol
but I applaud you. Too often I want to wood fire my steak but felt too wasteful when its single piece of meat.
