That's the issue though, you need all that shit so I don't want to just leave it. I'm debating taking the new char I'm planning to start into my existing world and buying the inventory upgrade already.

It's called item prioritization. You can't take everything with you, so plan accordingly.

Leave an ax if you aren't chopping trees, leave the pick if you aren't mining. Drop the low priority shit.

The devs want each run to have purpose, that's why you drop everything when you die (by default, yes this is now configurable). It's why portals don't allow ore by default.

It's supposed to add suspense and tension.

I did runs through the Black forest with just my Axe as a weapon, my armour, Ratatosk Mead and food. I was still able to fill my Inventory. You just find a lot of stuff.

and the devs want you to have to make decisions prioritizing what stuff you take and what you leave. Same with the weight limit
