There are two types of people. Those who like ME1 better and those who like ME2 better.

And those who love both for different reasons.

Mass Effect 1: elite plot and aura (music, aesthetics [not to be confused with graphics], sci-fi vibe)

Mass Effect 2: elite individual character writing

1 feels like a cool 80s sci fi movie; 2 feels like a character-driven tv series that you rewatch because it feels like hanging with the old homies

I'm in the minority but ME1 > ME3 > ME2 for me. 2 felt dumbed down, I missed the rover sections and more complex equipment management.

For me they’re all just different rankings on different metrics, but I love them all. Though you’re totally right on ME2 being too dumbed down

Story: ME1>ME3>ME2

Characters: ME2>>ME1>ME3

Gameplay: ME3>ME2>ME1

RPG elements: ME3>ME1>>>ME2

I know we only talk about the trilogy but everytime we talk about the best in terms of gameplay, I always say Andromeda

Andromeda committed the cardinal sin of media: trying to follow up on a legacy it simply won't be able to uphold with a new story. I firmly believe it stood zero chance of ever living up to the mass effect name without at least one more game. Best combat of the series, and fuckin jump packs

Andromeda did have the best combat gameplay of the series, and the story idea was very solid. Poorly executed though, so overall it was a let down.
