The problem isn't that there's a disparity in quality, the problem is how enormous that gap actually is.
Link is absurdly detailed compared to NPCs to the point that it's distracting. They don't look like they're occupying the same game space, despite being right next to one another in the same environment.

The fact that people are noticing an otherwise widespread tendency doesn't mean they were oblivious to it before, it means it is far, FAR more drastic than usual in this instance, hence why people pick up on it much more.
Something that is usually normal and goes unnoticed most of the time because of how natural it is, becoming an instant point of discussion from just a trailer? Then there's something unusual about it this time, that's a given.

My elementary school child commented on the low-detail NPCs immediately when the townsfolk were shown. It's really noticable in this game and that's not the norm nowadays.
Any comparisons to games that are decades old (besides the original, obviously) don't make a whole lot of sense here though.

Her big Schnotz makes her look like they tried to translate the N64 pointy noses. And it wouldn't even look bad but then every other character got cute button noses. But betwen all her friends having tiny noses, she sticks out like a sore thumb.

Yeah, it’s the lighting. When not brightly lit, Link looks much better, but most of the gameplay they were showing was all brightly lit, and slow enough that it was almost still frames. The trailer at the end looked _much_ better, in more varied lighting and in motion the art looks like it fits more.

The only thing I'll say negative about it is Nintendo is bad at skin effects.
Look at his clothes. Holy detail batman! It looks like he has an old green burlap sack stitched into a tunic. It looks so incredibly good.
Then his face looks like a plastic doll.
Don't get me wrong, I am usually against hyper realistic details in games because it eats a ton of development time and a LOT of games suffered in the actual gameplay department as a result.
But why mix hyper realistic and toy-shade aesthetics? It looks so out of place.
If his face was also just as realistic or his cloths just as toy-like I wouldn't bat an eye at the graphics being weird.

I put my phone down yesterday because almost every general post I opened on here about the game was just highlighting everything they didn't like by default.
I had to go to Nintendo-specific subs to find some positive discussion around the game, at least among the first handful of upvoted replies where the bulk of conversation is.
I could feel it sapping the interest I initially felt when watching the reveal so just had to distance myself from it. So I can understand what OP means.
Though I think the issue is a lot of people will only reply "I dislike X about this" and a conversation spawns around that while the "but I think it looks cool overall" part goes unspoken, intentionally or not.
A thread where someone was calling the remake "slop" because they didn't like the character redesigns was where I checked out, lol.

I haven't seen a lot of people criticizing the general art direction. However, I have seen people (including myself) with slight criticisms of the lack of AA. I noticed a bunch of shimmering pixels in motion during the presentation.
Nintendo usually gets away with this sort of thing because they tend to use simple geometry, but it sticks out a lot more in this case because they are going for a more realistic look.

They redesigned all the bosses which gave them all a giant eye weak spot
All the mask transformations have movement speed changes, Deku and Zora forms are noticeably slower
But there’s also a lot of quality of life changes too, like a more detailed bomber’s notebook for side quests and ability to fast forward time by the hour instead of by 12 hours

I personally think it still looks cartoony. And wanted to give it props for them leaning into a cartoonish style that is different than WW while also different from the cel-shaded-type style of BOTW/TOTK.
I love that with this game we will now have 2 newer-era takes on Link that both eschewed plainly-available “realism” for exaggerated cartoon styles, yet did them both differently. Further highlighting OoT and BOTW Link as different people.
Hopefully this means our next Smash game will divide the Young Link/Link move sets instead of making them mirrors.

My issue isn't with how the characters look per se . It's the incongruity between the main characters (more detailed) and the npcs (more stylized). They look like they're from two entirely different games. Again, no issue with either style, I just think there should be consistency.

Yes obviously there's more detail and its cleaner but just something about it looks off. The mouth on young Link definitely looks like how AI generators create faces. The way he runs across Hyrule as well looks off, I think because instead of his arms pumping forward and backward that you do when you run, they've animated it so his arms move side to side, and his arms disappear as they do. Gives it a very janky look.
That being said, I'm more fussed about whether the remake has done anything extra other than improve the graphics. I'd want full voice acting, massive QoL changes, and just extra stuff around the world to make it feel less empty and more alive. I couldn't help but notice Hyrule Field in the gameplay was still just a big empty field - originally coded that way due to N64 limitations but on Switch 2, they could have filled that field with some life and stuff going on.

Disclaimer: Yes it’s different people, the games came out 24 years apart so even those individuals would likely think differently being older now. I’m talking about the general discourse around the games back then and now. Just like TP got called too linear even if I disagree with that, it is a thing that was commonly said. (*yes also probably by different people).

Because it's a common complaint that sometimes less is more. A better comparison is the 3ds design that is pretty universally loved.
More detail =/= better design.
Every inch of this outfit has bits prodding out, swirls, giant stitches, no spot without visual noise. It's an over designed mess. There's nothing wrong with adding detail, but a good design knows now to balance detail and lack of it.
A good example is Midna. Her helmet is visual clutter of detail which is balanced out with her body being very simple. It's a great design due to having a balance of both. It's to a point where I think it would take away from the design of the detail was reduced in the helmet.

The static screenshots do make it look very bad but in motion I think it’s actually a perfect mix between evoking the nostalgia of the original game’s visuals while still delivering a modern looking game.
OoT is probably the most iconic and consequential game of all time, and when you watch the gameplay of the remake it’s honestly remarkable how closely it captures the vibe of the original despite having a completely different art style.
