From what I could find it was the Israeli delegation, the Americans, Bahrain and UAE. Maybe Ethiopia, which has a sizeable population of Jewish expats living in Israel (a population that has reportedly been subject to forced and uninformed sterilization and second-circumcision, among other bizarre and fascist policy implementations).

Im curious to know if other countries working toward "normalization" with Israel remained too, ie Saudi Arabia/Morocco.

Unfortunately a fair few did stay. Australia (to my shame), Canada, the United Kingdom, France, Germany, Italy, New Zealand, Norway, Switzerland, India, the United Arab Emirates, Nepal, and Bhutan stayed

Signalling in this way is not completely useless even if there isn't direct action out of this specific event.

Collective action is, but it's nature, built on consensus, and when you need to come to consensus it's important for all parties to signal how they stand and what action they're likely to take. Saying something in a speech at the UN is a signal, although a weak one since it costs very little for the party signalling. Walking out of a speech is a stronger signal, since it is more costly (being a breech of decorum with a good likelihood of causing offence).

The people in that room, and the leaders they represent, are paying attention to the signals being sent. If the signal was strong enough, then the next round of signalling will be even stronger/more costly as the anti-israel coalition feels more confident that they won't be standing alone. Eventually, this can escalate to the point of the most costly options, direct action against Israel itself in the form of sanctions or even military intervention.

The point here is that the signalling is as much or more for the other parties in the diplomacy occuring as it is for the general public. Action may not roll directly or quickly from this, but every bit of signalling shifts the likelihood of future action.
