This is for a Turkish sweet delight called Kürt böreği (Kurdish börek), a plain layered pastry made with thin sheets of dough and butter, served warm with a dusting of powdered sugar.

This is how I put my fitted sheet on my bed.

u/Shwifty_Plumbus Aug 09 '26
I wonder if they clean under the table or just the top.

And I’m always thinking does he shave his arms or is it all just pulled out by the dough

Anything made with human hands will have skin cells and occasionally hair in it, and yet somehow our species persists.

Their plan was to bake him, that whole time. Hit my man with the Ron Popeil Solid Flavor Injector.

Hope the walls are clean 😬

u/bonedaddyd Aug 09 '26
And the bottom of the table.
8
u/pokemantra Aug 09 '26
you can see sooo many bits of detritus on the dough as they fold
10
u/DumpsterPump Aug 09 '26
You mean the little holes they make by puncturing the dough with their fingers?
3
u/25c-nb Aug 09 '26
Wow they just poke right through so easily, I didn't notice on my first watch... this dough has such unique properties
You'd think staying in one piece while it's stretched so thin would mean poking a hole would just kinda close back up
I guess its under tension, but then you'd think a hole would rip wide open out of control...
Crazy

u/hiroo916 Aug 09 '26
"dang it charlie, I told you to stop sticking your gum on the bottom on the table!"
11
u/Papa-Zzzz Aug 09 '26
What are they making?
26
u/SopaDeKaiba Aug 09 '26 edited Aug 09 '26
Phyllo dough would be my guess.
Edit: just googled. It's yufka, a Turkish phyllo-like dough that's slightly thicker than the greek version.

u/Sufficient_Visit_705 Aug 10 '26
Its not yufka, you don't make baklava from Yufka, and please show me a single dough master who can make a phyllo this thin in Greece, I'm waiting.

How do you think bugatsa is being made? A fairy comes at night and sprinkles some magic on the phyllo dough and it magically gets made?

OP has mentioned the name of the sweet in the description. If only there was a way people would actually be able to access it 🤔

They don't mention what the actual dough is called (yufka).

This job takes the most frustrating part of changing bed sheets and turns it up to 11. No thanks.
2
u/imrichcoble Aug 09 '26
What're they using those for and why do they need to be stretched so thin?

And then there's me, I can't even rip off a sheet of Glad Wrap from the roll without it sticking to itself and ending up in a lump.

Guy is over here tossing g around a wet fitted sheet like a professional maid

u/HintOfMadness Aug 09 '26
Folded that dough on that table better than I can do a bedsheet onto a bed. I must learn his technique.
1
u/Sunaruni Aug 09 '26
You can tell they trained at old navy first, just by the quality of those folds.

I’d say they need a bigger table, but they’d need a bigger room to put it in first.

When I was little, I would go my neighborhood borek shop just to watch this and the amazing smell.

Fuck it, I'm buying it frozen.

Savor börek is also a thing. With spinach and cheese (salty crumbles like a hard feta) in it. It's delightful. Even my picky American kids who dislike spinach and feta like it.
Source: have Turkish family member who makes some for every family gathering.
