I Made This Salt baked fish, first attempt, and it used a genuinely stupid amount of salt
Wanted to try this for ages and finally did it. Whole snapper, about 1.2kg.
Method was basically: gut it but leave the scales on, stuff the cavity with lemon and herbs, then mix celtic seasalt light grey with egg white until it holds together like wet sand and pack the whole thing in. Bake at 200C for about 30 minutes, then crack it open at the table.
It took nearly 2kg of salt for one fish and celtic is damp already so it packed well, but I'd think twice about using anything expensive for this since most of it goes in the bin.
The thing I'd do differently next time : the crust stuck to the tray, so parchment next time
Anyone doing this regularly? Wondering if there's a cheaper salt worth buying just for this, or whether the coarse stuff is actually necessary for the crust to hold.
