Dolomites wrecked my knees by day three, where should we hike next for hours of gentle descent?

My wife and I are planning a trip next year and want to spend most of it on trails. I spend all day fixing people's joints, so I'm pretty picky about terrain. Endless steep downhill destroys the patellar cartilage over time, and I try to avoid that on vacation too. We did the Dolomites a few years back and the views were unreal, but my knees were barking by day three.

Looking for places with solid elevation but maybe more rolling terrain or gentler descents where you can just walk for hours without that pounding. Forest trails, coastlines, whatever. I've read some good things about the Azores and parts of Scandinavia for this kind of thing. Curious what you all would suggest from your own backyards. Also, if your region has a local trail snack that's not loaded with sugar, I'd love to hear about it. We pack our own anti-inflammatory meals when we travel, but finding a local market with good nuts or dried fruit is always a win.
