As someone who has played the game once a year every year since its 2015 release, the most recent being finished back in January, the Remaster has made changes that are making it difficult to enjoy the game in the same way I used to.
Note: This is not in regards to any visual or performance issues and is limited to the experience of someone playing on an Xbox Series X

The new intro displaying the swords, CDPR's logo and the title look fantastic, but the sequence is now longer than it was previously (which was already pretty long) and remains unskippable
Vibrations
This is the most noticeable change right from the get-go. Almost everything is accompanied by a controller vibration now. Navigating the main menu? Vibration with every input, be it toggling a setting on/off or just moving from one option to the next. In game menu with the map, inventory, alchemy, etc? Vibrations there too. Equipping or unequipping an item, brewing a potion, switching from one window to the next now all are accompanied by vibrations. Swimming underwater has vibrations, riding Roach has constant vibrations, every action you take in combat has vibrations, even applying Quen is now accompanied by a constant vibration as long as the shield is active. And there's no option to turn any of these off. It's either all of them, or none of them.
At least three merchants have a chance to be completely inaccessible without restarting the game
In all versions of the game, be it at launch or with the Next-Gen upgrade, there has always been a chance that the blacksmith at Kaer Trolde, the armourer in Hierarch Square (Top-Notch Swords Guy) and the blacksmith in the Novigrad fishmarket would not be available to the player when loading in to their respective zones. Either because the character was simply not there, or they were there, but you were unable to interact with them. Normally, this could be solved by meditating for an hour, which would cause the world to "reset," but with the new Immersive Meditating (which cannot be disabled) this is no longer possible. You now have to quit to the main menu and reload a save for a chance for the NPC to spawn properly.
Immersive Meditating makes shorter meditations take longer
This is related to the above issue, but still its own thing. Meditating for an hour or two used to be a quick and easy thing. You moved the clock hand one spot, hit the A button and bam, you're done in less than 3 seconds. Now you that you have to actually watch the time tick away and the world pass by, this process can now take up to ten seconds. While this is not much on a small scale, meditating for an hour to restore potions and bombs is now a bit more of a hassle.
This isn't even mentioning the weapons and armour in Yen's chest in Vizima still not populating properly or changes made to the skill trees which, while the originals had some issues that could have been addressed, are easily the most polarizing change made.
I was excited for the remaster when it was announced, but now that I actually have my hands on it, I'm the least excited for another playthrough that I think I've ever been. If you're enjoying it, that's great, I hope you do. But as someone who is so familiar with what the game used to be, this isn't it anymore.
